Description
Chianti Classico Gran Selezione DOCG “Zac” is 100% Sangiovese from the Gugliaie vineyard (2.5 ha). It is dedicated to Anna Corsini, the sister of Prince Tommaso and it represents the new challenges of the winery.
The first vintage was produced in 2008 (1,800 bottles) whet it was an IGT Toscana Sangiovese. In 2016 this wine became a Chianti Classico Gran Selezione red wine.
Winemaking and Aging
Winemaking
Fermentation takes place in an open, truncated-conical stainless steel tank with a semi-automatic punching-down system. After 24 hours at 20°C, fermentation continues at a controlled temperature of 26°C for a period of 16 days; the grapes are inoculated with selected indigenous yeasts.
Aging
18 months in used barriques and 12 months in bottle.
