Pairing
Birillo is an original red, very easy to drink and appealing. It could even be described as a “mini-Supertuscan”.
It is, in fact, a pleasant wine for all types of meals with Cabernet Sauvignon and Merlot representing the power, depth, color, refinement, aromas characteristics of a Supertuscan. Yet it is made to be simpler, smoother, and overall more accessible for everyone.
Winemaking
In stainless steel tanks, left open under controlled temperatures (max 30°C) for 14 days.
Aging
12 months in barriques, second-hand.
Solar and intense, full and vibrant, fragrant aromatic ensemble of Cabernet Sauvignon and Merlot grapes from the vineyards of Marsiliana in Maremma in a dark red glass, with purple reflections. The dark fruit, among blackberries and crunchy blueberries, enriched with the intense and balsamic notes of cardamom, caper flower, thyme and myrtle.
On the palate it is an audacious velvet of wild berry jam, dark chocolate and juniper, with the flexuous balance in savory and defined tannins. The liquorice delightful ending has the touch of a iodate Mediterranean night breeze.
