Principe Corsini’s Vin Santo is dedicated to St. Andrew Corsini, Carmelite and Bishop of Fiesole who was recognized as a saint by Boniface VIII.
An ancient and rare wine born from the selection of Sangiovese, Trebbiano and Malvasia grapes. After three months of drying on racks, pressing takes place. According to tradition, the must ferments for five years on mother yeast in sealed small wooden barrels. Only the best barrels are destined for aging for another five years and then bottled.
What the Tuscans call “the wine of hospitality with a keen and vast soul” is for the Corsini family a symbol of the historicity and ancient craftsmanship that tradition has passed down. Little science is used for this rare monument of Chianti Classico, forerunner of the “Real Wines” category.

The grapes spread on the racks and hung have been dried for 3 months. The must has fermented in small wooden barrels for 5 years.
Aging
Aging in barrels is 5 years plus 5 for the best ones.
