2023 was a complex year for oil production in Tuscany because of the shortage of olives to be harvested. Small quantities, nevertheless high quality. It allowed the production of Chianti Classico EVO and DOP oil at Villa Le Corti, in the historic Corsini family’s oil mill.
Manual harvesting, crushing within six hours from the collection, and cold processing of olives are the essential rules that guide the production of Principe Corsini oil. This is the perfect oil, both for raw condiments and to accompany the great classics of Italian cuisine.
Extra virgin olive oil has been produced at Villa Le Corti since 1363. That was the first time the Corsini family decided to invest economic resources in the territory of San Casciano in Val di Pesa, the northernmost area of Chianti Classico.
A centuries-old tradition refined over the years and reached us, the result is a product of excellent quality and obtained in compliance with the surrounding nature and the sustainability of crops, harvesting, and pressing.
The production of oil at Villa Le Corti is divided into two products: an Extra Virgin Olive Oil and a DOP oil “Chianti Classico” from certified organic cultivation. The 2023 oil campaign began in October and, despite a lower quantity of olives, produced a very high-quality oil.
As in ancient tradition, EVO olive oil harvesting is only manual, and crushing takes place strictly within six hours, to prevent the olive from being damaged or losing its qualities. The Extra virgin DOP oil of Chianti Classico produced at Villa Le Corti is obtained only from organic olives, and processed in an artisanal way. The result is an extra virgin olive oil of the highest quality and great taste.
Also in this case, the mechanical processing takes place exclusively at cold to preserve the quality of the product. The olives are processed within six hours from the harvest, at a temperature not exceeding 26 ºC.
