Description
Vin Santo Principe Corsini is dedicated to Saint Andrew Corsini, a Carmelite and Bishop of Fiesole who was recognized as a saint by Boniface VIII. An old and rare wine made from selected Trebbiano and Malvasia grapes. After three months of drying on the racks, the pressing takes place.
According to tradition, the must ferments for five years on its lees in sealed barrels called caratelli. Only the best ones are aged for an additional five years before being bottled. Vinsanto is the pinnacle of an oral tradition that has been handed down, generation to generation, through the centuries.
When well done, it unequivocally represents the best of the farm. Little science and much tradition is used to produce this rare monument of Chianti Classico, making it a precursor to natural wines.
Winemaking and Aging
Winemaking
The grapes spread on the racks and hung have been dried for 3 months. The must has fermented in small wooden barrels for 5 years.
Aging
Aging in barrels is 5 years plus 5 for the best ones.
Tasting notes
Dark amber to the sight almost mahogany. The nose is rich in candied fruit, orange and citrus fruits, orange blossom honey and yellow flowers but also chestnut, humus, potting soil and a smoky color that enhances the scene.
As the temperature increases, dates and spices are released. The mouth is extremely sweet but not without grace and clarity, thanks to the orange that flows through the whole glass and to the freshness and flavor that balance the drink. Persistence is impressive.
