Description

Don Tommaso Chianti Classico, “Gran Selezione” starting from 2010, shows the natural potential of a blend of Sangiovese and Merlot.

It is a contemporary-style wine, solidly anchored to the territory. The fruit is deep and complex, it is a soft, intense, and big wine to drink.

Winemaking and Aging

Winemaking

It’s a selection of the best Sangiovese and Merlot grapes from the winery. After destemming, the grapes are left whole and transported without the use of pumps. Spontaneous fermentation takes place for about 15 days in open air steel tanks with an automatic punch-down device.

Aging

20 months in barriques and 500 and 700-liter tonneaux, mostly used, 7 months in concrete vats, at least 3 months in bottle.

Pairing

Pasta with wild boar ragout – Baked lamb – Game main courses such as venison with juniper – Beef stew – Florentine-style tripe – Aged Tuscan Pecorino – Polenta with meat or mushroom sauces.
